Delicious Recipes to Try Out This 4th of July!
We asked our community for their favorite Independence Day recipes and our community did not disappoint!!
First up, here's a delicious Summer Corn & Black Bean Salad (Yield: 8-12 servings) by @chefmoni!
Bright, crisp, and refreshing for warm summer days, this salad is perfect for a potluck, picnic, or party. Serve with chips as a dip or as a side. 🌽
FOR THE SALAD
2 TBSP avocado oil
3 ears fresh corn, shucked and kernels removed
1 can black beans, drained and rinsed
1 red bell pepper, seeded and diced
1 jalapeno, seeded and small diced
2 ripe but firm avocados, pitted and diced
½ cup fresh cilantro, chopped (plus some leaves for garnish)
½ English cucumber, cut into bite-sized wedges
8 ounces cherry tomatoes, cut into halves or quarters
¼ cup pickled red onion, or finely diced red onion if you don’t keep or make pickled regularly
Zest of one lime
Freshly cracked black pepper
FOR THE DRESSING
1 clove garlic, pressed or finely grated
2 TBSP honey
¼ cup lime juice
½ TBSP mustard
¼ cup + 2 TBSP avocado oil
1. Heat a large sauté pan over medium high heat. Add avocado oil. Once hot, add corn kernels and cook, stirring occasionally for about 8-10 minutes, until corn is tender and slightly browned. Season with salt and pepper. Cool before mixing into salad.
2. Meanwhile, combine all salad ingredients in a large bowl, tossing to mix.
3. In a separate small bowl, whisk together garlic, honey, lime, mustard, and avocado oil. Pour dressing over salad, tossing to thoroughly combine.
Note: If you plan to make this salad ahead, leave out the avocado until right before serving so they don’t brown.
Next up, here's another summer salad suggestion that's PERFECT for July 4th! This one's from @kimberlycarsiawellness: Watermelon Feta Summer Salad.
1 seedless watermelon, cubed
1 container of fresh blueberries, washed
1/2 cup - 1 cup feta crumbles or cubes (to your taste)
2 Tbs extra virgin olive oil
1/4 c diced red onion
1 Tbs lemon or lime juice
1/4 c fresh herbs (mint, basil, or both), roughly chopped
Pinch of sea salt + black pepper
Whisk together ingredients in a bowl.
In a large serving bowl, combine watermelon, feta, and berries.
Pour the dressing over the salad. Gently toss and Serve.
*1 Tbs raw pumpkin seeds (pepitas), sunflower seeds or hemp hearts.
MORE INSPO: *can also add in 1 diced english cucumber *throw it on top of arugula. If you want to let it marinate, keep the cubed watermelon separate. Place in the fridge.
